Frank 0f203dfa41 docs(open-webui): document the 3-model LLM picker and host.containers.internal routing ...

The LLM backends section said two ROCmFPX endpoints; the fleet now serves
three (frank-large/medium/small) with different runtimes. Rewrite it, fix the
gotcha that claimed host.containers.internal does not resolve on a bridge
(it does — verified end-to-end for both on-host endpoints), and add a History
entry for the 2026-09-21 model-picker rebuild.
